On my latest post, I mentioned about my best friend visiting me from the Philippines.
Thankfully, she asked what she could buy for me in the Philippines, and I said,
"Dried coconuts will do".

Well, it seems quite boring and too simple to just ask for dried coconuts.
However, they are quite pricey here in Korea since they're tropical fruit.
So when she visited me last week, she brought me two bags of dried coconuts,
and I started to wonder what to create out of these two yummy bags of treats.

After the little brain storming, I decided to make Chocolate Coconut Muffins.
aka C&C Muffins.

I've baked many chocolatey things,but never ever tried anything with coconuts in it.
And this was the time to try something new after having Christmas sugar cookie comma!

I'll share the recipe & the whole process here so you can also enjoy some
rich gooey chocolate muffins with some coconuts in it.

C&C Muffins
Time: 30 min - 50 min
Serving: 10-12 muffins
Difficulty: Medium
Oven: 160-170 ºC (preheat the oven!)


Step 1.
Let's see what we'll need to bring out to get started.

You'll need:
40 g dried coconut, sliced
70 - 90 g of melted chocolate
100 g butter
175 g self raising flour (medium flour)
1 egg
20 g cocoa powder
4 g baking powder
240 g milk
50 g sugar
pinch of salt

※ Make sure to bring butter, milk, and egg to the room temperature.
You can also pre-mix the dry ingredients. (flour, cocoa powder, baking powder)


Step 2.
Mix creamy butter and sugar with a pinch of salt.
Keep mixing till you can hardly hear sugar cracking.


Step 3.
Add an egg to the butter & sugar mixture.


Step 4.
Now, bring your melted chocolate next to the bowl.
Add 1-2 tablespoons of melted chocolate as you beat the mixture.
Don't put it all at once, chocolate might be separated from the mixture.


Step 5.
You can now combine dry mixture.
The muffin dough would be thick as you mix, but don't worry.
Pour the milk you measured and mix it further.
Lastly, add the sliced coconuts!
※ Leave 1/4 of the coconuts as sprinkles.


Step 6.
Scoop in the dough to your muffin wrappers, lined up on your muffin tin!
Sprinkle the sliced coconuts you left on the Step 5.


Step 7.
Put them in the preheated oven at 160-170 ºC, for 20 minutes.
You can use skewers to check if they're done.
I casually roamed around the whole house waiting for the oven's ding! sound.


Step 8.
After 20 min, C&C Muffins are finally out!
Repeat the same process for the rest of the muffin dough.
Last but not least, enjoy them with your favorite hot drinks :)



After my family's taste test, they all approved C&C Muffins.
It was a successful baking day as I tried new recipe. Plus, it turned out really delicious!


I'm actually munching on the last C&C Muffin as I type this sentence.
I also have another bag of dried coconuts.
And definitely looking forward to turn it into another treats soon.

  20. Babe, what kind of sins are these? Seriously - I feel like today all I've been reading are cooking recipes (baking, I don't know why I said cooking) and I don't think I can bake everything but I'm like pleaseeeeeeee. Or, my stomach is asking more than I am.

    These look beautiful and delicious and everything I look for in muffins. And they seemed quite easy actually and I've always thought muffins were hard to bake!
